2tspVirgin olive oil
3clovesGarlicChopped
1/4poundSweet Italian turkey sausage
1cupUnbleached flour
1cupRolled oats
2tspBaking powder
1/2Green appleCoarsely chopped
1/2cupOrganic free-range chicken broth
Instructions
In a small skillet, heat the olive oil and sauté the garlic over low heat. Remove the sausage casing and add the sausage meat to the skillet. Use a wooden spoon to break sausage apart into little crumbles. Cook till sausage bits are browned and nearly crunchy. Remove from heat and allow to cool.
Preheat the oven to 325ºF. (162.8°C)
Whisk the flour, rolled oats, and baking powder together in a mixing bowl.
Empty the sausage bits, garlic, and oil into a glass measuring cup. Add the chopped apple. Pour the chicken broth into the pan and scrape up the brown bits. Pour the chicken broth and bits into the apple sausage mixture. Stir with a fork until combined.
Make a well in the flour and pour in the sausage mixture. Mix on medium speed using a paddle attachment.
Turn the dough out onto a slightly floured surface and gently knead. Roll the dough ¼-inch thick, and cut the biscuits into desired shapes with cookie cutters.
Place the biscuits on a parchment-lined cookie sheet and bake 12– 15 minutes. Turn the oven off and leave the biscuits in another 20– 30 minutes. Remove them from oven, cool them on a baking rack, and store them in a cookie tin.
Notes
If you are lucky enough to have a farmer’s market nearby, buy your sausage in bulk. That way, it will already be out of the casing.
